Pork cutlets are a classic BBQ or pan-seared favourite, offering tender, flavourful meat, with the bone and fat adding extra juiciness. We source whole, pasture-raised pigs from ethical farmers, including Tallabung Pork, a boutique producer located in the Lachlan Valley region of NSW. Tallabung specialises in rare black-haired breeds that roam freely on open pastures, resulting in rich meat with a naturally sweet flavor. All of the pork we source is pasture-raised, antibiotic-free, and hormone-free.
