DESCRIPTION
A classic cut often linked to the beloved Italian dish of the same name, osso buco is a cross-cut shin packed with flavour. The name translates to ‘bone with a hole,’ filled with delicious marrow. It reaches its full potential when braised slowly with vegetables and broth or wine. We source whole bodies of grass-fed beef from ethical producers near the NSW-Victoria border. Our grass-fed, grass-finished beef is primarily black or red Angus, raised on chemical-free farms without antibiotics or hormones.
