Often considered the most sought-after cut of lamb, the cutlet is naturally flavourful, juicy, and tender. It’s best cooked at high heat on the BBQ, over coals, or in a hot pan. We source whole lambs from a range of ethical producers in NSW and Victoria, with most coming from Gippsland, a hilly region in Victoria known for its fertile pastures. The lamb we provide is grass-fed and finished, with each cut clearly labeled with the producer's name and breed.
