DESCRIPTION
Butterflying a lamb leg transforms a traditional roasting favourite into a top-quality grilling cut, all while maintaining its rich flavour. It can be cooked on the BBQ or over hot coals, or seared quickly and finished in the oven. We source whole lambs from a selection of ethical producers across NSW and Victoria, with most coming from Gippsland, a region in Victoria renowned for its fertile, hilly pastures. The lamb we provide is grass-fed and finished, with each cut clearly labeled with the producer's name and the breed.
