The lamb shank is a classic braising cut that takes on a soft, melting texture when cooked gently in liquid, adding a luxurious depth of flavour to whatever it’s cooked with.
We source whole lambs from a variety of ethical producers in NSW and Victoria, with the majority coming from Gippsland, a hilly region of Victoria that’s known for its fertile pastures.
The lamb we source is grassfed and finished and clearly marked with the name of the producer and the breed.
