Butterflying a lamb leg turns a roasting favourite into a prime grilling cut, without compromising on flavour. Can be cooked on the BBQ or over hot coals, or simply sear it quickly and finish in the oven.
We source whole lambs from a variety of ethical producers in NSW and Victoria, with the majority coming from Gippsland, a hilly region of Victoria that’s known for its fertile pastures.
The lamb we source is grassfed and finished and clearly marked with the name of the producer and the breed.
