A classic cut that is commonly associated with the popular Italian dish of the same name, osso buco is a cross-cut shin that is teeming with flavour. The words translate to ‘bone with a hole’, which is filled with tasty marrow. At its best when braised slowly with vegetables and broth or wine.
We source whole bodies of grassfed beef from a variety of ethical producers near the border of NSW and Victoria.
Our grassfed and finished beef is primarily black or red Angus. The cattle is antibiotic and hormone-free, and is raised on chemical-free farms.
