There are so many ways to cook pork belly! In the UK they slow roast for a soft flesh and a hard rind, or ‘crackling’. In China they braise it with skin on, or marinate and cook it as a whole slab. Slow roasted honey pork belly. This was so, so tasty and amazingly easy, with a baste made of honey, cumin, paprika and ground chilli. The meat was tender enough to pull with a fork and the crackling was like candy.
