Pork crackling close up! This is Tallabung pastured pork from Forbes NSW. We usually let the pork speak for itself when roasting belly, but this was done with a marinade for something different. Just be sure to marinate the flesh side only, then place the belly in the fridge for a few hours, uncovered in a roasting tray with the skin side up, allowing the flavours to develop and the skin to dry out (essential for a crispy skin). Ingredients were miso paste, fresh ginger, rice wine vinegar, five spice, brown sugar, orange juice, soy sauce and salt flakes. #porkcrackling #tallabung #pasturedpork #closeup #getinmybelly
