The Dulwich Hill Gourmet Meats team prepared and broke down a hind quarter of been for our lovely customer @_tomspinks_ …he purchased an aged grass fed beef hind quarter.
We broke it down to every cut he desired from the top starting with Osso bocco right down to the sirloin….all the way down the line.
He also decided to dry age the t-bone and the sirloin which he then covered in lard!
